- 12 oz peach nectar juice
- 1 peach for garnish
- 1 jalapeño for garnish
- 1 jalapeño for syrup
- 1 cup sugar
- 1 cup water
- 1 bottle of champagne
- In a small pan, mix the water, sugar, and chopped jalapeño. Stir over medium heat for about 5 minutes until the sugar dissolves.
- Remove from heat and let sit for 1 hour. Strain the syrup through a fine mesh sieve and store in the refrigerator until you’re ready to use.
- Mix 6 oz jalapeño simple syrup and 12 oz peach nectar juice together (for each glass, you’ll need ½ oz jalapeño syrup and 1 oz peach juice). Pour 1 ½ oz of the mixture into each champagne coupe.
- Top each glass with champagne and garnish with a slice of peach and a slice of jalapeño.
